Pumpkin Scones With Maple Glaze

Happy Halloween, everyone! I've been anxiously waiting all day to hand out candy. Growing up, we had a really long driveway, so we would never get trick or treaters and then I spent the last 10 years in apartment buildings, where I would also never get trick or treaters. We moved into a house last December, so this will be my first halloween with the possibility of seeing all the kids dressed up. I even went overboard and bought big packs of king size candy bars. 

I decided to make these delicious and super easy pumpkin scones while I was waiting. They have a wonderful pumpkin flavor and are super flakey. I know scones are generally a breakfast item, but I can eat them anytime of the day.

INGREDIENTS

  • 2 Cups all purpose flour
  • 1/2 cup brown sugar, packed
  • 2 1/2 teaspoon baking powder
  • 1 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon cinnamon 
  • 1/2 teaspoon salt
  • 1/2 cup very cold unsalted butter, cut into small pieces
  • 1/2 cup half and half
  • 1/2 cup pumpkin puree
  • 1 teaspoon vanilla

GLAZE

  • 1 cup powdered sugar
  • 2 tablespoon maple syrup
  • 2 tablespoon milk

DIRECTIONS

  1. Preheat the oven to 400 degrees F and line a baking sheet with parchment paper
  2. In a large bowl, combine flour, brown sugar, baking powder, pumpkin pie spice, cinnamon, and salt
  3. Toss the cold butter with the dry ingredients with your fingers until the mixture looks like coarse crumbs
  4. In a separate bowl, mix together the pumpkin puree, half and half, and vanilla
  5. Combine the pumpkin mixture into the dry ingredients and stir until it starts to come together
  6. Dump the dough onto a clean surface and form a 8 inch disk with your hands
  7. Use a very sharp knife to cut it into 8 equal edges
  8. Bake for 15-20 minutes or until slightly golden 
  9. To make the glaze, whisk together the powdered sugar, maple syrup, and milk, until smooth and well combined. 
  10. When scones are done baking, allow them to cool for 10 minutes before drizzling on the icing
